Spiced carrot and orange soup

SPICED CARROT AND ORANGE SOUP

Ingredients:

750 g carrots
1 onions
2 oranges
30 g butter
1 1/2 tsp ground coriander and/or grated fresh ginger
Salt and pepper
1 litre water or stock
175 ml single cream

Method

Prepare carrots by peeling and thinly slicing, finely chop onions and grate the zest off the oranges then juice. Melt butter in large saucepan and add onion. Cook stirring for 2-3 minutes until soft but not brown. Add the carrot, grated orange zest, ground coriander and/or ginger and salt and pepper. Mix with the onion and cook gently for 5-10 mins (if possible as it mellows the flavours if you can). Add the stock and bring the soup to the boil and cook stirring occasionally until the vegetables are very tender. Let the soup cool slightly and VERY CAREFULLY blender the soup until smooth either using a hand blender or food processor. Before serving add a little more water/stock if the soup is too thick add the orange juice and cream. Taste and adjust seasoning and reheat if required.
