Beetroot Dip

BEETROOT DIP

Ingredients:

Beetroots from the garden
natural or Greek yogurt
lemon
garlic (if desired)
salt and pepper

Method:

Trim any leaves on the beetroots then thoroughly wash. Cut the top and bottom off the beetroot then, being very careful of your knuckles, grate the beetroot and place into bowl. If using garlic peel then finely chop and add to the bowl. Add enough yogurt to make a dip and then add lemon juice and zest to taste. Add salt and pepper again to taste as desired.
