Asian Green and Feta muffiins

ASIAN GREEN FETA MUFFINS

Makes 12 or 24 mini muffins

Baking Time: 20 mins for large muffins

Ingredients:

220 g self-raising flour
1 bunch Asian greens
1 clove garlic, finely chopped
100 g feta cheese (can use marinated varieties)
1/2 red pepper, chopped finely
Handful of frozen green peas
1 tablespoons finely grated Parmesan cheese
1/4 cup milk
1/2 cup vegetable oil
1 egg
extra finely grated Parmesan cheese for topping

Method

Preheat oven to 180 c
In a small frying pan heat the butter and quickly fry the minced garlic and Asian greens for 2 to 3 minutes. Do not overcook. Chop finely and set aside Grease mini muffin pans with butter or use paper cases.In large bowl, sift flour and add shredded Asian greens, feta, tomatoes, peas, and Parmesan. Stir to combine. In another bowl, whisk together the milk, oil and egg until well combined. Add milk mixture and use a metal spoon to stir until combined (do not over mix). Spoon mixture into prepared mini muffin pans. Sprinkle the top with extra Parmesan. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Turn out onto wire rack to cool. Serve warm or at room temperature.
